Sweet Corn Salad and Summertime Spaghetti

Cody Utzman is non-stop. In addition to owning several of Greenpoint’s very favorite restaurant establishments—Papacitos, Brooklyn Standard and the newly opened Café Royale—Utzman is the ultimate Greenpoint foodie, and more than just a restauranteur: he’s a chef, too. He even walked away the reigning champion of the Food Network cooking show Chopped, where hopeful chefs compete against one another for a cash prize. Long story short: Utzman knows what he’s doing, and the Gazette is extremely lucky to have two recipes from one of the nabe’s most celebrated foodies!

SWEET CORN SALAD

Ingredients:

5-6 Fresh Local Cobs of Corn
1 Red Bell Pepper
1 Greed Bell Pepper
1 Small Red Onion
2 Green Onions
1 Bunch of Thai or Regular Basil
½ Cup Really Good Quality Olive Oil
Juice of 2 Limes
Salt/Pepper/Red Chili Flake to Taste

Directions:

1. Shuck the Corn and Slice the Corn from the cob. Be sure to cut close to the cob to get all the good stuff
2. Small Dice the Peppers, and Onions
3. Tear the Basil into pieces, cutting can bruise it
4. Mix it all together in a bowl and enjoy the perfect taste of summer!

Note: All ingredients can be purchased on Saturday at the Greenpoint/Williamsburg Farmers Market.

SUMMERTIME SPAGHETTI

This is my favorite dish this time of year. The basil if fresh from your window boxes the tomatoes are at peak ripeness from the farmers market, and the combination of the warm pasta and cool sauce is really unique an refreshing.

Ingredients:
15-20 Roma Tomatoes
1 Small Red Onion
1 Cup Green Italian Olives
2 Green Onions
1 Bunch of Fresh Basil
½ Cup of Good Olive Oil
¼ Cup Red Wine Vinegar
Salt/Pepper/Red Chili Flake to Taste
1 pound of Dried or Fresh Spaghetti
½ cup of Grated Parmesan Regginao Cheese

Directions:

1. Peel the Roma Tomato with a vegetable peeler, seed and dice them small
2. Dice the onions
3. Slice the green olives
4. Mix it all together with remaining ingredients and chill in the refrigerator for at least 1 hour
5. When Ready to Serve, Cook the Pasta, place hot cooked pasta in a serving bowl and top with a scoop of tomato sauce
6. Grate Fresh Parmesan on top and Enjoy.
